Process: | Grapes are softly pressed and undergo fermentation at a controlled temperature. Maceration takes place for about 7 days for the Gaglioppo grapes and 25 days for the other varietals. The wine ages in stainless steel tanks for 6 months. Then it is aged for about 21 months in oak casks, 1 month in barriques and later 2 more months in the bottle. |

Pairing: | Perfect with elaborate meat dishes, game and aged cheeses. Best served around 64° F. |
Crete del Falco
A complex and fine bouquet with delicate hints of sweet spice, nutmeg, dried red roses and red fruit preserved in alcohol. On the palate it is full, warm, velvety and well balanced.
